Once each year a batch of Canefire is selected to brew out to become BACKBURN. We only cold brew and a batch of Backburn can take up to 5 months just to brew.
Brewing out allows all the sugar in the patch to be utilised. Backburn then, is not as sweet as Canefire. It is however much more mellow because of the time spent gentley brewing. Obviously this means that Backburn is a much stronger spirit at just over 100 US proof!
Backburn should be sipped over ice.
