This wine has been made with select Chenin Blanc in the true style of a Vouvray from the Loire Valley in France. The grapes are gently crushed and destemmed so only the free run portion is collected. The press is used as a drainer so no rolling or pressing takes place. The juice is settled and some is transferred into old oak barriques for wild fermentation. The remainder is wild fermented in stainless steel. We then blend the steel, barrel fermented and reserve wine to form the unique blend. Secondary fermentation, "methode traditionelle", is triggered within the bottle. After 24 months of ageing on the lees the wine is disgorged and corked. Due to careful juice extraction this wine is never fined or filtered.
